Caciocavallo di Latte di Bufala

 One of the few raw water buffalo cheeses that can be imported to Canada, this cheese is stretched like mozzarella and aged for 120 days. La Maremma is a self-contained farm in southern Italy that has been devoted to making exquisite cheese while minimizing their ecological footprint for generations. 

Sweet and lactic, with subtle hints of yogurt and browned butter. Delicious on its own, great for melting into gratins, or on pizza. Try it in a fondue, or marinated with oil and herbs.
