Zacharie Cloutier is a firm unpasteurized sheep's milk cheese from our friends at Fromagerie Nouvelle France in the Eastern Townships of Quebec.
Aged for 4-6 months and named after the cheesemaker's ancestor, this is a must-try for fans of Spanish Manchego. Expect aromas of toasted butter and caramel, with a pleasantly umami browned-butter taste. Fantastic in omelettes and pasta, or with a glass of off-dry rose or light red.
