‘When the Apricots Bloom’ is a literal translation of an Arabic idiom referring to something that has little chance of happening. This was the first time Revel was able to capture them at their peak in 6 years.
Paired with early season apples, dandelions, elderflower and chamomile - the flavour is tart and malic with some gentle sweetness and florality.
Wild ferment. Unfiltered and unfined. Zero residual sugar.
