Clos du Tué-Boeuf is one of the most revered names in natural wine — a small, biodynamically farmed domaine in the Cheverny appellation of the Loire Valley, run by brothers Thierry and Jean-Marie Puzelat. Their Vin Blanc is the entry point to the estate, and it’s a masterclass in what Sauvignon Blanc can be when farmed with care and vinified with minimal intervention.
Pale gold with a slight haze, it opens with a vivid and expressive nose: fresh grapefruit, white currant, lemon verbena, and a flinty, smoky mineral edge that is unmistakably Loire. On the palate, it’s taut and precise — bright acidity, a lean, focused mid-palate, and a long, saline finish with a whisper of wild herb. Alive, energetic, and completely authentic.
