Txotx!

Txotx! is a blend of a single barrel of vintage cider with apples from 2016, 2017 and 2018, and a Dolgo crabapple cider from 2025.

A nod to traditional Basque "txotx" (pronounced choach) ritual, where a long pour instantly aerates and decants the cider. To pour, remove the cork and partially reinsert, and you now have a spout!

The aroma is muddled pineapple, crabapple blossoms and sweet oak. It tastes of papaya and sweetgrass, with a touch of sweet body and tannin from the barrels. This is a still cider, so it's easy to crush and makes the perfect accompaniment to fatty cheeses, cured meats, and salty olives.
