Tomme Vaudoise is a soft mixed rind cheese from the Vaud and Geneva regions of Switzerland, made from pasteurized cow's milk. It has a thin, delicate rind with white or rust-coloured mould and an exceptionally creamy paste. When young, the cheese is mild and lactic, with pronounced hay, yeast, and animal tones as it matures.
An excellent addition to a cheese board at any age, and pairs excellently with potatoes and vegetables. Try flambéing a young wheel for a unique dessert!
