Vin Jaune is one of the most singular wines in the world — a style unique to the Jura, made exclusively from Savagnin, aged for a minimum of six years and three months under a veil of yeast called voile in old barrels without topping up, developing an oxidative complexity that is unlike anything else in the wine world. It comes in its own bottle, the clavelin, which holds exactly 620ml — the amount said to remain after evaporation from a litre of wine during the ageing process.
Domaine Tissot is one of the Jura's most celebrated estates, farming biodynamically across their vineyards in Arbois and producing wines of extraordinary precision and character. The En Spois is a single-vineyard Vin Jaune from one of their finest parcels — a wine of immense depth and longevity, with the characteristic walnut, curry, dried fruit, and oxidative complexity of the style, but with a freshness and mineral precision that sets Tissot's wines apart. At 17.5% ABV it is powerful and concentrated; it will age for decades. Serve at cellar temperature with Comté aged 24 months or more, roast chicken with morel cream sauce, or foie gras. Open it an hour before serving.
