From the roaster: "Managed by Kate (Nguyễn Mỹ Duyên) and Leo (Nguyen Thanh Long), Lộc Rừng is a small and highly dedicated processing operation in Đưng K’nớ. They work with a small collection of local farms and focus on experimental processing. This is a unique low oxygen "Ferveo" process built around gentle gas fermentation in water, allowing for dramatically extended fermentation times at very stable temperatures."
