Stuffed Eggplants (Makdous)

Makdous is a traditional Levantine delicacy made just as it’s always been—by hand, in small batches, with love (and a lot of garlic). These eggplants are grown in the sun-drenched soil of Qaa, a rural village nestled at the foot of the Anti-Lebanon mountains. Handpicked, each eggplant is carefully stuffed with a flavourful mix of walnuts, garlic, and sweet pepper before being preserved in olive oil.
