Packed in 2022 from Galician Atlantic sardines at the peak of their summer season, these tins have been resting in olive oil for two years, slowly mellowing and deepening in flavour as the oil and fish exchange character. The result is a sardine of extraordinary richness and complexity: softer in texture, more rounded in flavour, and with a depth that fresh-packed sardines simply can't match.
