Redfish with Dulse

Chasse-Marée is a Québec-based conservas producer applying the European tinned fish tradition to the exceptional cold-water fish and seafood of the Gulf of St. Lawrence. This tin is one of the most distinctly regional in the range — a combination that could only come from the North Atlantic, and one that makes a compelling case for what Canadian conservas can be.

Redfish — sébaste in French — is a deep-water species from the cold, nutrient-rich waters of the Gulf of St. Lawrence, prized for its sweet, mild white flesh and the natural richness that comes from living slowly in frigid water. Here it is paired with dulse — a red seaweed harvested from the rocky Atlantic shores of the Maritimes and Québec, where it has been eaten for centuries as a wild food and a seasoning. Dulse is one of the most intensely flavoured seaweeds in the world: deeply umami, with a briny, slightly smoky character and a mineral quality that is unmistakably oceanic. In this tin, it does not compete with the redfish but amplifies it — adding a layer of savoury depth that makes the combination taste more fully of the sea than either ingredient could alone. Packed in sunflower oil with salt and spices, the result is a tin of genuine originality: rooted in a specific place, made with wild ingredients from that place, and tasting exactly like it.
