Made by a woman led cooperative in Fneideq, a mountain village 1,400m above sea level in Northern Lebanon. The co-op is led by El Mokhtara ("The Chosen One"), who, with 21 other women, continues a rich tradition of preserving using ancestral methods.
This tangy, sour, deep molasses adds bold flavour to salads, marinades, dressings, and Levantine or Persian dishes.
