More than 150 indigenous Georgian grape varieties come together in Poliphonia, a vivid field blend from Pheasant's Tears. The vines were given to the winemakers by Georgia's Ministry of Agriculture as part of an effort to preserve and study native varieties. Yellow, green, pink, red, purple, and blue grapes are co-planted and co-fermented, bringing a whole spectrum of colour and texture to the glass.
The wine spends 10 days on its skins, then ages for a year in qvevri before bottling. Pour it with a spread of savoury dishes and let its skin-contact texture take centre stage.
