Pecorino Toscano is an ancient cheese produced with sheep's milk in Tuscany. The first mention of the cheese is in the work of Pliny the Elder in 77AD.
This is a richer, less salty version of the more common Pecorino Romano. An excellent table cheese best enjoyed alongside a dry white wine.
