Pave de Paris

The pavé (paving stone) is an iconic symbol of the history of Paris. Synonymous with revolution, it today embodies an agroecological revolution. This cheese, resulting from a unique expertise, is a soft cheese made from whole cow and goat milk, produced on the farm using traditional methods. This unique cow and goat pavé with an ashed crust reveals a dense paste with a yellow color marbled with white. Both flexible and delicate, its flavors are frank and mineral on the crust, giving way to fruity notes at its heart. 

INGREDIENTS: pasteurized cow's milk, pasteurized goat's milk, salt, lactic ferments, vegetable ash, rennet

Our cheese case is small and meticulously cared for. We don’t try to carry everything, but instead we scour the field for tasty and interesting cheeses that satisfy the imagination as much as they satisfy the palate. We keep an ever rotating selection of about 45 cheeses in stock so there is always something new to try, but you can count on finding your favourites too--and every one of them is delicious!

Order before 10AM for same-day delivery throughout the GTA Monday-Friday! Orders placed after 10AM will be delivered next day. Packages arrive between 3pm-10:30pm, unfortunately we are not able to accommodate specific delivery times at the moment. However, if you would like a specific delivery date, simply make a note at check out and we can hold your package until the requested date. 

Orders placed outside of our delivery zone will be shipped through Canada Post. Canada Post delivers Monday - Friday, any estimates in delivery times made by Canada Post are approximate and are not guaranteed. 

We're also available for pick-ups and in store shopping 11AM to 7PM seven days a week.
