This cheddar may look unassuming, but has been aged for two years to allow its flavour to fully blossom, without becoming too dry or bitter. Well-balanced between creamy, salty, and a caprine finish, this cheese is fantastic to snack on, or add to your favourite recipe. Second place winner at the 2023 Royal Agricultural Winter Fair!
Capella Meadows is located in Huron County, Ontario, and has been dedicated to organic farming with biodynamic principles since day one. The goats are allowed to graze on pasture from May-November, and a portion of the property is reserved for allowing natural biodiversity with no human intervention.
