Northern Spy is a classic for Revel Cider, but this vintage is a little different—richer and perceptually sweeter (zero residual sugar though, like all our ciders).

There are few apples that Revel have more experience with than Northern Spy - this is their 7th vintage. As the climate continues to change, this cider tastes more like wine every year.

More hot days pushes the ABV of Northern Spy higher, adding a weight we're more familiar with in grape fermentations. Southern Ontario sunbeams have lowered the acid of this apple too giving this vintage a soft, plush texture.

What's it like? The aromas this year are notably different from previous iterations too. Expect soft notes of golden raisins, dried mango and white flowers. 

Tannins are soft this time, but it still has that weighty chewy-ness. It drinks like a dry French cidre; a minerally, textured expression of the fruit. Gentle bubbles lift Viognier memories, without any sweetness at all.
