Named after Princess Mafalda of Savoy, Mafaldine are long, regal ribbons with ruffled edges that were designed to be as beautiful as they are functional. Those wavy borders aren't just decorative — they dramatically increase surface area, catching and holding rich, creamy, or chunky sauces in a way that flat pasta simply can't.
Gigi's Mafaldine is bronze-extruded and slow-dried at low temperature, giving it a rough, porous texture and a genuine wheaty depth. Made from durum wheat semolina and water, nothing more. It's the kind of pasta that elevates a simple sauce into something worth talking about.
Pair with a slow-cooked lamb ragù, a rich ricotta and sausage sauce, or a luxurious truffle cream. The ruffled edges were made for it.
