A rich bouquet of lavender, lilac, and chamomile coming out on the nose. The taste is a light golden apple with sumac coming through between different flowers on each taste with a nice saline kiss.  Made from a blend of wines, every year we retain approximately 1/3 of inventory and blend into the new production, similar to a modified solera method to help build character and consistency.  A unique expression of Ontario terroir and an exploration into styles and techniques.
