L'Odyssée Pétillante Chapitre 2 Champagne

Romain Henin works out of Aÿ — one of the great Grand Cru villages of the Marne, home to some of the most prized Pinot Noir in all of Champagne. His project is an unfiltered, hyper-focused evolution of grower Champagne: radical, zero-compromise viticulture built on living soils, biodiversity, and native yeast fermentations across Grand Cru terroirs. No shortcuts, no additives, no adjustment. The wine is the vineyard.

L’Odyssée Pétillante — the sparkling odyssey — is Romain’s ongoing series of Champagnes, each chapter a distinct expression of the same philosophy applied to a new vintage and a new moment in the cellar. Chapitre 2 is the 2023 vintage, disgorged December 2025 with zero dosage: no sugar added at disgorgement, leaving the wine entirely as the vintage and the terroir made it. A blend of Pinot Noir, Pinot Meunier, and Chardonnay — the classic Champenois trinity — vinified with native yeasts and bottled without filtration, so what you open is the wine in full, unmediated form.

Zero dosage Champagne demands a lot of a vintage: without sugar to soften or round, every element of the wine must be in balance from the start. The 2023 base delivers — taut and precise, with the structure and depth of Aÿ fruit and the kind of saline, mineral tension that comes from genuinely healthy soils and an unhurried approach in the cellar.
