Cantillon is Brussels’ most revered spontaneous fermentation brewery — a living museum of traditional lambic production that has been operating continuously since 1900. Grand Cru Bruocsella is their most uncompromising beer: a straight lambic aged for three years in oak barrels, unblended and unfiltered, with nothing added and nothing taken away.
Where Cantillon’s gueuze blends lambics of different ages for complexity and carbonation, Bruocsella is a still, flat lambic — the raw, undiluted expression of spontaneous fermentation at its most elemental. Intensely sour, deeply funky, and extraordinarily complex, with notes of aged oak, lemon rind, barnyard, and a dry, tannic finish that lingers long after the glass is empty. It is not a beer for the uninitiated — it is a beer for those who understand what lambic can be at its absolute peak.
