Spaghetti alla Chitarra is not your average spaghetti. Named after the chitarra — the guitar-like tool traditionally used to cut it — this square-edged pasta has a rougher, more textured surface than round spaghetti, which means it grips sauce with extraordinary tenacity. Every bite is more flavourful for it.
Gigi's version is made the right way: extruded through bronze dies for that characteristic rough texture, then dried slowly at a low temperature to preserve the full flavour and integrity of the pasta. The result is something that tastes genuinely different from supermarket pasta — because it is.
