Fileja is a traditional hand-rolled pasta from Calabria — Italy's sun-drenched southern toe — where it's been shaped around a thin rod for generations. The result is a thick, twisted tube with a rough, porous surface that grips sauce like no smooth pasta can.
Gigi's Fileja is made from just two ingredients: durum wheat semolina and water. No shortcuts, no additives. The texture is firm and satisfying, with a wheaty depth that holds up beautifully to bold, rustic sauces — think 'nduja, slow-braised lamb, or a rich tomato ragù with Calabrian chili.
