A traditional cheese of Catalunya, Spain; Garrotxa was almost extinct until a group of young cheesemakers revived it in 1981, since then it's seen somewhat of a renaissance in its home around the Pyrenees.
Garrotxa is a rich, full bodied cheese with a firm almost flakey texture. The rind is covered in a velvety, grey mould that gives it a distinct woodsy aroma. The flavour is of damp earth with nutty, herbal flourishes.
