Colombia Granja Paraiso 92 SL-28

Little Victories Coffee Roasters sources exceptional lots from producers pushing the boundaries of what coffee can be — and Granja Paraiso 92 is one of the most celebrated experimental farms in Colombia. Located in the Valle del Cauca, Granja Paraiso 92 is the project of Camilo Merizalde, a producer who has pioneered some of the most technically sophisticated and flavour-forward processing methods in specialty coffee, earning a global reputation for consistency, innovation, and extraordinary cup quality.

This lot is SL-28 — a Kenyan variety originally developed by the Scott Agricultural Laboratories in the 1930s and celebrated for its complex, winey acidity and intense fruit character — processed using Granja Paraiso 92's signature Thermal Shock Washed method with double anaerobic fermentation. The process is as precise as it sounds: the coffee cherries undergo two stages of oxygen-free fermentation before being subjected to thermal shock — rapid temperature change — to arrest fermentation at exactly the right moment and lock in a specific and highly controlled flavour profile. The result is a coffee of almost startling intensity and clarity: vibrant tropical fruit, complex fermented sweetness, a juicy, bright acidity, and a long, layered finish that keeps evolving in the cup. This is experimental specialty coffee at its most compelling — best brewed as a careful pour-over, with full attention.
