A limited edition every year! This farmhouse cheese is made from organic thermized milk, and aged for a minimum of 12-18 months on wooden planks. Compared to its younger version, this cheese has a slightly more toothsome texture, with flavourful crystals that melt in your mouth.
Expect powerful floral and fruity aromas, with notes of butter, cream, and a hint of washed rind funk on the finish.
Winner in its category at the 2024 American Cheese Society Competition, and 3rd in its category at the 2020 World Cheese Awards!
