Cantillon is Brussels’ most revered spontaneous fermentation brewery — a living museum of traditional lambic production operating continuously since 1900. Fou’ Foune is their most celebrated fruit lambic: a gueuze-based lambic refermented with fresh Bergeron apricots, released annually in limited quantities and sought after by lambic enthusiasts around the world.
The 2025 vintage is everything Fou’ Foune is known for: intensely aromatic, with the vivid, sun-ripened character of fresh apricot layered over the wild, funky complexity of aged lambic. Bracingly sour, with a dry, tannic finish and a fruit character that is unmistakably real — not sweet, not artificial, but the pure essence of apricot expressed through spontaneous fermentation. One of the great fruit beers on the planet.
Serve with washed-rind cheeses, foie gras, or simply on its own with the attention it deserves.
