Cantillon is Brussels’ most revered spontaneous fermentation brewery — a living museum of traditional lambic production operating continuously since 1900. Ashanti is one of their rarest and most intriguing releases: a lambic refermented with black pepper, produced in extremely limited quantities and released only in exceptional years.
Named after the Ashanti people of Ghana — a nod to the spice trade routes that brought black pepper from West Africa to Europe — this is a beer of extraordinary complexity. The black pepper brings a warm, aromatic heat that is subtle and layered rather than sharp: peppery and floral, with a dry, spiced finish that intertwines beautifully with the wild, funky acidity of aged Cantillon lambic. Bracingly sour, deeply complex, and unlike anything else in the lambic world.
