Candele — meaning "candles" in Italian — are one of Naples' most dramatic pasta shapes: long, hollow tubes traditionally served whole at celebrations. Candele Spezzate are the broken version, snapped into shorter, more manageable lengths without sacrificing any of the shape's character.
The wide, hollow tube is the key. It captures thick, hearty sauces inside and out, making every bite a full experience. Gigi's version is bronze-extruded and slow-dried at low temperature, giving it a rough, porous surface and a genuine wheaty depth that mass-produced pasta can't replicate.
A natural match for slow-braised meats, rich tomato ragù, or a bold sausage and broccoli rabe. Neapolitan cooking at its most satisfying.
