Avonlea Clothbound Cheddar is a love letter to tradition. Its recipe traces back to the Orkney Islands, north of mainland Scotland, and it's handmade in the style of the great classic English cheddars — right here on the rolling hills of Prince Edward Island.
What makes it truly special is the terroir. The salt air and iron-rich soil of PEI lend a distinctive character to the milk of local Holstein cows, and that character shines through in every bite. The milk is gently heated but not pasteurized, allowing beneficial microbes to thrive and develop the depth and complexity that sets this cheddar apart.
