Not a lot of blues scream "beer cheese", but BirbaBlu may change your opinion! This rustic Italian blue is soaked in local blonde ale and covered in malted wheat before heading to the aging room. The result is a mellow, approachable blue with light fermented fruit notes and a subtle hint of salty cooked caramel.
