Akebono Sake Brewery is based in Aizubange, in the Aizu region of Fukushima Prefecture — one of Japan's most storied sake-producing areas, known for its cold winters, pure water, and long tradition of exceptional brewing. Bange Yumenokaori is made with Yumenokaori, a locally developed sake rice variety prized for its clean flavour and aromatic character, and brewed as an Origarami — a style of lightly filtered sake that retains fine rice sediment in suspension, giving it a distinctive hazy appearance and a richer, more textured character than a fully clarified sake.
"Ichibi" refers to the first pressing of the season — the most prized and freshest expression of the brew. Origarami sake of this quality occupies a fascinating middle ground: more complex and structured than a fully cloudy nigori, more textured and expressive than a clear sake. Expect fresh rice, gentle floral notes, a creamy, lightly effervescent texture from the sediment, and a clean, bright finish. Serve it well chilled, shake or swirl gently before pouring to distribute the sediment. Pair with oysters, sashimi, soft cheese, tempura, or simply on its own as an aperitif.
