Sous voile, meaning 'under a veil,' referring to the layer of yeast that forms on surface of white wine in barrel for 3 years before bottling producing an oxidative wine similar to sherry. Bouquet of walnut, hazelnut, raw almonds, green apple & spice; with lemon, nuts & spice on the palate and a powerful and long finish. Like a baby Vin Jaune, which is aged for a minimum of six years.
