Small Scallops with Garlic & Chili

Ar de Arte sources only the finest scallops from the Cambados fish market — the heart of Galicia's shellfish trade, on the Rías Baixas coast where the cold Atlantic waters produce bivalves of exceptional sweetness and quality. These small scallops are packed in olive oil with garlic and chili: a simple, classic combination that adds warmth and depth without overwhelming the natural flavour of the scallop.

The garlic mellows in the oil during packing, becoming sweet and fragrant rather than sharp, while the chili adds a gentle, lingering heat that makes each bite more interesting than the last. Eat them straight from the tin, on toast with a little aioli, stirred into pasta with a splash of the packing oil, or as part of a conservas spread alongside anchovies and sardines. At 110g they're a generous serving for one or a shared starter for two. Serve with a cold glass of Albariño.
