Progression '25
Vidal | Prince Edward County, ON
- Notes
Vidal, with a sparkling change of pace. Lighthall Vineyards’ Progression 2025 puts this familiar Ontario grape in a different setting: a sparkling white from Prince Edward County, ready for the first pour before dinner or a cheese board that becomes the meal.
Vidal is a hybrid grape well suited to cold-climate growing, and its name is often associated with Canadian icewine. Progression is a reminder that the grape’s story doesn’t end there. Here it appears in sparkling form, offering another way to explore Ontario wine beyond the more familiar Chardonnay and Pinot Noir. Prince Edward County provides the regional connection, while Vidal gives the bottle its own identity.
Start with young goat cheese, creamy Brie, or a few salty crackers while dinner comes together. For a fuller spread, try smoked trout, a potato rösti with crème fraîche, or a vegetable tart with chèvre. On the cheese board, add apple slices and toasted nuts for contrast rather than reaching straight for something sweet. Serve well chilled in a white-wine glass, with enough room to enjoy the aroma as well as the bubbles.
