Hidden Bench is an iconic Canadian winery with a long history of delicious wines on the picturesque Beamsville Bench. Though all their wines are farmed organically with estate fruit (rare for Canada),
Zero oak is used at all for this Chardonnay release, a mix of concrete and stainless steel to preserve the purity of fruit and keep it zippy and fresh-feeling. Fermented with wild yeast, salty, lemon curd, crunchy, green apple, red apple, slight touch of brine/salt and some freshly zested ime.
