Translating to "Sitting in the Celler", this spectacular cheese has spent 10 or so months ripening to perfection. It is smooth and meltable, and will also be a stunner on a grazing platter. This is a deeply savoury cheese with notes of toasted almonds, fried onion, with hints of butterscotch and tangy creme fraiche.
