La Bête-À-Séguin is not a cheese for the timid. Named after the legendary Québécois artist Arthur Séguin — known for his daring spirit and refusal to compromise — this raw milk brie from Fromagerie de l'Île-aux-Grues carries that same fearless energy in every bite.
Made on the storied Île-aux-Grues in the St. Lawrence River, this is a cheese with a sense of place and a personality all its own. Its white bloomy rind develops striking reddish tones as it matures, making it as visually dramatic as it is delicious.
