Adoray is one of those cheeses that stops you in your tracks. Made by cheesemaker Alain Boyer at Fromagerie Montebello in Quebec, it carries a deeply personal name — a tribute to Adorice and Raymond, his father and grandfather. That kind of care and heritage shows in every detail of this extraordinary cheese.
Wrapped in smoked spruce bark and finished with a striking orangey-pink washed rind, Adoray is as beautiful to look at as it is to eat. Cut it open and you'll find a custard-soft interior with an ivory sheen that practically melts before your eyes.
