Alcaparras Spanish Capers

Rio Verde's Alcaparras are traditionally prepared Spanish capers packed in wine vinegar — small, briny, intensely flavoured. Spain produces some of the world's finest capers, particularly from the semi-arid regions where the caper bush thrives in poor, rocky soil and intense sun, and these deliver that characteristic punchy, floral brininess that makes capers one of the most useful ingredients in the pantry.

Use them wherever you need a hit of acidity and depth: scattered over smoked salmon or gravlax, stirred into a salsa verde or gribiche, folded into a tuna or chicken salad, draped over a pizza bianca, or simply eaten alongside anchovies and good bread. 

 Rinse before using if you prefer a milder flavour, or use straight from the jar for full intensity.
