Bleu Ermite

Bleu Ermite (French for hermit, a reference to the monks who make the cheese) is a blue cows milk cheese from Quebec. 

The cheese has a natural rind and has a crumbly texture that becomes creamy as it ripens. The flavour is salty & sharp with notes of almond, mushroom & fruit pits.
