Vin Noé is the project of Jonathan Purcell in Burgundy. A part of "New Burgundy" explring natural wine in the most iconic vineyards in the world. Not afraid to experiment with orange wine aligote & rumour has it he even has some Chenin Blanc in Meursault.
Pattaya is a Bourgogne Blanc from the Macon. So we get some riper baked apple notes alongside a little flinty minerality and baking spice. Some paprika notes as well, but what Jonathan is best at isn't aroma, it's balancing the classic texture of burgundy alongside the best parts of natural wine.
