Maître Splinter — yes, the Teenage Mutant Ninja Turtles reference is intentional, and very La Sorga — is Antony Tortul's Picpoul pétillant naturel from the Languedoc. Tortul is one of the region's most inventive natural producers, and his pét-nats are among the most reliably delicious in the category: honest, expressive, and made with the kind of lightness of touch that lets the grape and the place speak clearly.
Picpoul is the Languedoc's great high-acid white variety — its name literally means "lip-stinger" — and it's an ideal candidate for the pét-nat method: the natural acidity keeps the wine fresh and lively, and the gentle effervescence from the in-bottle fermentation adds texture and energy without weight. At 10.5% ABV it's light, refreshing, and endlessly drinkable. Expect green apple, citrus, a hint of brioche from the lees, and a clean, saline finish. Drink it cold, drink it fast, drink it with oysters, grilled fish, or anything from the sea. Serve well chilled.
