Orecchiette — "little ears" in Italian — are one of the great pasta shapes for a reason. That distinctive cup shape isn't just charming; it's functional. Every little bowl catches and holds sauce, broth, and chunky ingredients in a way flat or round pasta simply can't. A bite of orecchiette is a complete bite.
Gigi's version is made from durum wheat semolina, extruded through bronze dies for a rough, porous surface that grips sauce even further, then dried slowly at a low temperature to preserve the full wheaty flavour and firm texture. The result is pasta that genuinely tastes like something.
