Lasagnacce Rotte — "broken lasagna" — takes the wide, ruffled sheets of traditional lasagna and breaks them into irregular, rustic pieces. Gigi's version is bronze-extruded and slow-dried at low temperature, giving each piece a rough, porous texture that grips sauce beautifully.
