The jovial wine from this latest release. A big blend of Cinsault, Chardonnay, Grenache Blanc, Grenache Noir, Syrah, and Merlot. All grapes from Oustrics. The majority portion was directly pressed slowly in the vertical press, and a smaller portion mechanical pressing. All juice blended together for fermentation in fiber vats. The wine finished fermenting with around 30 grams of residual sugars, so it was bottled with a crown cap. An absolute ripper in terms of the more immediate side of their production. Explosive energy with a touch of fizz. The volatility present is perfectly balanced with the remaining sugar. Tons of candied fruit and an electric palate. A wine that jolts you awake. Pure unadulterated enjoyment.
