Chargrilled Sardine Pieces in Marinade Sauce

Güeyu Mar is one of the most extraordinary conservas producers in Spain — a project born from the legendary Asturian beachside restaurant of the same name, where chef Abel Alvarez built a global reputation for cooking fish and seafood over open wood fire on the Cantabrian shore. Every product in the conservas line carries that philosophy, and this one is a particularly fine example of how much thought goes into even the most approachable tin in the range.

Large Cantabrian sardines are first marinated in Arbequina extra virgin olive oil from Castillo de Canena — one of Spain’s finest producers — before being roasted over holm oak wood, which gives them a clean, resinous smokiness distinct from other fire sources. They are then canned in a marinade of apple cider vinegar and aromatic spices: a preparation with roots in the Spanish escabeche tradition, where acid and spice work together to brighten, preserve, and add layers of complexity that develop over time. The result is a tin of real depth — smoky, tangy, aromatic, and unmistakably Güeyu Mar. A more accessible entry point into the range than some of the rarer products, but no less considered. Serve at room temperature on good bread, alongside olives and cheese.
