Geoduck (pronounced gooey-duck) is the Pacific Northwest’s most extraordinary clam — a large, long-lived bivalve harvested from the cold, pristine waters of Alaska, prized by chefs and seafood lovers for its mild, sweet flavour and uniquely firm, almost crunchy texture. It is unlike any other clam you’ve tasted.
Wildfish Cannery, based in Alaska, has done something remarkable with it: dry-cured the clam meat with salt, pure cane sugar, garlic, and black pepper, then smoked it over alderwood — the same wood that defines Pacific Northwest smoking tradition. The result is what they call “clam bacon”: deeply savoury, smoky, and rich, with a satisfying chew and a flavour that is genuinely addictive. Hand-packed in small batches, gluten-free, and unlike anything else on a cheese or conservas board.
