Le Puy de L'Ours is a small natural domaine in Savigny-lès-Beaune — a village on the northern edge of the Côte de Beaune that has been producing wine since the Middle Ages and remains one of Burgundy's most underrated appellations. The name Ez Connardises translates roughly as "the nonsense" or "the foolishness" — a tongue-in-cheek nod from the producer, and a reminder that great Burgundy doesn't have to take itself too seriously.
The wine itself is anything but foolish. Made from Chardonnay grown on the limestone and clay soils of Savigny, this is a white Burgundy with the precision and mineral depth that the appellation is capable of at its best — expect ripe stone fruit, hazelnut, a hint of toasted oak, and a long, savoury, mineral finish; it's elegant and restrained, built for the table rather than the tasting room. Pair it with roast chicken, grilled fish, aged Comté, or a soft-ripened cheese. Decant briefly and serve slightly cool.
