Campo Dei Sass Prosecco

Case Paolin is a certified organic estate in the Veneto, farming Glera on the hillsides of Treviso with a commitment to low-intervention winemaking that sets their Prosecco apart from the industrial volumes that dominate the category. Campo dei Sass — "field of stones" — is named for the rocky, mineral-rich soils of the vineyard, and that character comes through in the glass: a Prosecco with more texture, more depth, and more to say than most.

At 11% ABV it's light and refreshing, with the fine, persistent bubbles and delicate aromatics that define good Prosecco — white peach, pear, acacia blossom — but with an underlying minerality and freshness that reflects the organic farming and the stony terroir. Drink it as an aperitivo, pair it with oysters or fresh cheese, or open it simply because it's a beautiful bottle. Serve well chilled.
